MasterChef is the series that has caught the world by storm having editions in the U.S., Australia, Canada and even here in the Philippines. None of the previous versions will have the prestige and international flavor of MasterChef Asia having contestants from 8 different countries. There are 3 Filipinos in the 15 contestants: Jake Aycardo, Lica Ibarra and Rico Amancio. They are joined by amateur cooks from China, India Taiwan, Vietnam, Indonesia, Malaysia and Singapore.

The show premieres 9pm September 3, 2015 THURSDAY on LIFETIME (Skycable ch 65, Cignal digital TV- ch 63). The primetime airing of Master Chef Asia is on Thursdays and Sundays. Mentor and judges include some of the biggest names in the culinary world: Chef Susur Lee, Chef Bruno Menard and MasterChef Australia Finalist Audra Morrice. Susur Lee is no stranger to cooking show fans. He is the world famous Hong Kong chef who has graced nearly all TV competitions as judge: TOP CHEF, CHOPPED U.S. and Canada and competitor in Iron Chef U.S.. He was also able to host Andrew Zimmern of Bizarre Foods Americas in 2 of his restaurants in Toronto.

Susur has been referred to as the “Father of Fusion” and has won numerous culinary awards including Food and Wine magazine’s “Ten Chefs of the Millenium” and the 5-Star Diamond award from the American Academy of Hospitality Sciences. He is the owner-chef of four highly-rated restaurants – LEE, Luckee, Bent and LEE Kitchen in Toronto, Canada as well as TungLok Heen in Singapore. For 20 years, he has been the Executive Consulting Chef for the TungLok Group, which owns over 40 restaurants in Asia.

Chef Bruno Menard earned 3 Michelin Stars at L’Osier, a Tokyo-based restaurant that has been voted one of the top French restaurants outside of France. Bruno has spent 20 years establishing some of the best restaurants in Asia and currently runs a top-tier culinary consulting firm in Singapore.

Audra Morrice has been described as the next Martha Stewart of Asia. Her success on Master Chef Australia cemented her career in food and launched her into the world of culinary TV. Audra is currently based in Australia. Working closely with the Singapore Tourism Board, she is an ambassador for the Singapore Celebrity Concierge campaign. Her televised cooking show, Tasty Conversations is also GEM in Australia and on FYI across Asia.

These three prestigious judges were kind enough to be interviewed at the URBN Kitchen during their Philippine tour to promote the show. Film reviewer Philbert Dy joined me in chatting with these great culinary minds.

—Jude: Was there any language or cultural barrier considering contestants came from 8 different countries?

Bruno: 8 different countries, 8 different languages but only one language on Master Chef Asia cuisine. We speak the language of cooking. There is only one common passion, it doesn’t matter how you speak, where you’re coming from. We have the same passion. We speak cooking. Cuisine is what we do so there is no barrier. That’s the beauty of cuisine. You can see today even though we are in Philippines in Manila we give to three people exactly the same ingredients they come with 3 different recipes. Even if you come form the same country you’re gonna do something completely different every time. That’s the beauty of cooking everybody understands food. We are here to have emotion so bring me the emotion through the food. Through the story on the plate.

Audra: It’s very simple you have 30 minutes these ingredients, cook!

Bruno: I’m not used to English myself. You have one theme, they know exactly what to do. They just go for it based on their instinct their knowledge. We don’t care where they come from, the language, what we care for is about the story. It’s about the flavor it has to be delicious look good, impress us give us sensation. And tell us why we’re going to be thrilled eating look amazing, but why does it look amazing?

—Philbert: How do you balance what kind of ingredients you are using? Doesn’t someone from China for example have an advantage over Vietnam depending on what kind of ingredients are available to them?

Audra: if this is your challenge the next one might not be. It was sort of varied in the kind of challenges we had. Also they were put to the test how well they knew their neighbors. No one really has an unfair advantage. It was very well balance. We might insist you cook a certain type of cuisine for this challenge. For the next challenge you cook something totally different. It’s a bit up and down for everyone. Everyone had their moment to shine.

Bruno: Let’s say we ask them to cook lechon the specialty from here. But you’re gonna have someone to go on stage to teach you and explain step by step and how to do it correctly. It was very fair all the time.

—Jude: How would you characterize the finalists were they a strong batch? What’s similar in all of them?

Audra: In Australia they are in season 7 in U.S. and Canada I don’t know how many seasons. Also in their local countries they are in 3 or 4 seasons. Contestants are very cluey on what to expect in the show. The beauty about Master Chef is every new batch comes in and they never know what’s going to be thrown at them. You can never really prepare for it. What we saw was incredible cooking. There was a lot of stories heartfelt cooking with a lot of stories attached to it. I think they also evolved from day 1 to the last episode. A lot of them evolved and developed. We had contestants who had very humble plans about their future. AT the end of their time on the show it became bigger. The world is their oyster. When the attitude changes everything else changes.

—Philbert: Chef Susur how has judging affected your view on food, when you go out and eat and so on?

Susur: When you are cooking you are your own self. I’ve been doing it for many years. Being a chef it’s like being a conductor in the kitchen. You are making sure your cooks hit the right notes. So with judging it’s very much the same. Finally you can actually hear yourself. All these years conducting, not just saying it, the moment you are tasting. So you are articulating certain things that you are hearing yourself. It’s great therapy for a chef being a judge. Its no different when you write your own notes, you have better memory, when you’re typing it, exactly the same with me. All that experience gave me more satisfaction with the knowledge I’ve acquired. You actually express it in words and teaching somebody to help them get to the next level. To make sure they understand and also explore, I think that’s what’s important to be a master. If you wana hold a title as judge you have to be a master. The viewer as Bruno said can’t talk back to you. Your judgment is going to tell them this is the right way, the wrong way. This is something I’m learning.

They never really said who they were dozens of men with M16 rifles; they could have been CAFGU, the military or even the rebels. The children huddled together with their mother Dionisia (Alessandra De Rossi) as the strange man (Alvin Anson) approached her. He asked for food and politely wondered if she had seen other armed men in the area. Although their own resources were scarce, Dionisia readily gave them even the fish she had been cooking for her own brood.

Everyone knows about the poverty in Manny Pacquiao’s childhood. But here in this latest biopic directed by Paul Soriano. We see that violence was something that surrounded him even as a child. Living in the remote areas of Southern Cotabato, the Pacquiao family was no stranger to armed conflict raging around them. They could have been one of the many people, victimized or lost their lives in the many battles between armed groups and the Philippine military (not unlike what happened with SAF 44 in Mamasapano).

Extreme poverty, violence these are just a few of the things People’s champ Manny Pacquiao had to overcome as a child. The film’s story highlights the many unknown people that have aided, molded him into who he is today. Credit should be given to writer director Paul Soriano and screenwriter Froi Medina. They sought out the many details and experiences that shaped not just the Greatest Filipino fighter but possibly the Greatest Boxer of all time. These are the seminal experiences that built his body, strength and most of all his character.

Struggling Parents: Alessandra De Rossi & Alex Medina

Rosalio (Alex Medina) for example has always been accused of being an absentee father to Manny and his brood in many articles. In this film however we see that he tried to be a responsible and even caring parent. Rosalio’s meager wage was never enough to provide for his family, which was a constant source of conflict.

Alessandra De Rossi’s performance as the very outspoken Dionisa was nothing less than powerful to the point of accurate realism. To call Aling Dionisia a nag would be an understatement. But considering the state they were in and her own efforts in providing for the family, you can hardly blame her for being that way too.

Due to their youth and long history of realistic portrayals you could see why Alex Medina and Alessandra were cast as Manny’s parents. Medina gave Rosalio an all too human face, especially when he could no longer bear the daily tirades and left the family. It wasn’t a justification for him leaving nor was it an attack on Dionisia but rather recognition of the dire situation they were in.

One thing that Dionisia passed on to Manny in spite of all the poverty and ignorance was the gift of FAITH. She wanted him to be a priest, but even as a young boy helping feed his brood he knew that it was next to impossible. The Lord had other grand plans for him. So no matter the adversity Manny knew that the power of prayer was something he could rely on to overcome them.

Buboy Villar’s Steely Determination

Buboy Villar is the perfect age for Manny in KID KULAFU. He was young enough to be boyish and old enough to throw and take punches. He was on the cusp of manhood trying to survive in a very harsh and unforgiving world. Buboy was also in a boxing film in Cinemalaya that featured kids made to fight sometimes to the death by an underground syndicate. It was entitled: CHILDREN’S SHOW directed by Roderick Cabrido and written by Ralston Jover. More important than the physical preparation for that role, is the mental state of desperation that pushes someone to get into boxing or underground fighting.

Buboy was actually a famous child star; he has a strong semblance to the Manny Pacquiao of that age, with pugilists’ nose and somewhat thick lips. His frame and body size is almost exact of the gaunt Pacquiao from old black and white photos at age 16. In spite of the not so intimidating physical features it’s the steely determination in the eyes that Buboy was able to replicate. The film rested on Buboy’s young shoulders and he more than lived up to expectations.

Boxing Coaches: Cesar Montano and Jake Macapagal

Sometimes there are people in your life who change you, who set you onto a path. Usually you don’t even know it while it’s happening, you only realize it looking back. Tio Sardo (Cesar Montano) is one of those people for Manny. He is Dionisia’s cousin and for Filipinos, at least one relative or extended family always have a strong influential role. Since Dionisia’s unofficial separation, she had to seek the help of her cousin in providing for her 4 growing kids: Isidra (Iris Sanchez), Manuel (Buboy Villar), Bobby (Niño Robert Bayungan) & Ruel (Patrick Carrera). Buboy Villar’s younger brother Christian Dave played the toddler aged Ruel.

Tio Sardo was obsessed with boxing. Manny’s first glimpse of the sport was through old Betamax tapes of an aging Mike Tyson about to be KO’d by Buster Douglas. Sardo’s passion was infectious and needless to say was fire in the eyes of an adolescent Manuel. Jake Macapagal’s role Dizon on the other hand was the very first real boxing coach whose son Abner (Jomari Angeles) became Manny’s teammate and close friend.

Mark ‘The Filipino Wrecking Machine’ Muñoz won a unanimous decision victory against Brazilian Jiu Jitsu Champion Demian Maia in UFC 131, Vancouver, Canada on June 12^th, 2011 Manila Time. The victory of the Fil-Am was a wonderful Independence Day gift for the Filipinos. It didn’t come easy as Maia staggered Muñoz early in the 1^st round with a hard left hook. Maia improved his stand up and dirty boxing by working with Luis Doria a former Brazilian National boxing coach. Doria also happens to be the coach of Junior Dos Santos who is in the main event with Shane Carwin.

The second round was where Muñoz not only recovered but dominated the fight. Mark landed a left hook that sent Maia ducking for cover. It was easier to take him down after that, Muñoz went on his powerful ground pound that weakened his opponent further. The Filipino Wrecking Machine sealed the deal with two more takedowns in the third round.

During his interview with Joe Rogan, Muñoz dedicated the win to former boxing champ Genaro Hernandez who passed away recently. Mark said, “He caught me with a good punch in the first round and I was doing the stinky leg. His cage work surprised me. I didn’t expect him to be this strong. I told him it’s a true honor to fight him in the cage.” Joe Rogan added “Genaro was a good guy and worked for the UFC at one point in time.”

Maia was a tough match up for Mark. Demian was the only one to take Anderson Silva to five rounds.

The Jiu jitsu training from Ryron Gracie and Fabricio Verdum helped him defend against a choke attempt by Maia in the third. The win over Maia is his third straight win, since CB Dalloway and Kendall Grove. During the Grove fight Mark appreciated the support of the many OFWs who came out in droves in Abu Dhabito support and cheer him on.

Muñoz is not the only fighter with Pinoy blood in the UFC,BrandonThe truth Vera was touted as one of the hot names until his consecutive losses. Philippe Nover was a certified nurse in ‘til he became interested in Mixed Martial Arts and qualified for the Ultimate Fighter Season 8.

Mark Muñoz was a division one NCAA wrestling champion who recently opened his own MMA training facility the Reign training Center inLake Forest,California. The list of UFC fighters who have come for his training includes current UFC Middleweight champion Anderson Silva, Antonio & Rogerio Noguera , Fabricio Verdum, Uriah Faber and Shogun Rua. UFC sportscaster Mike Goldberg said, “Jake Ellenberger , Krystof Soszynski have also become training partners. He’s that good of a wrestler. They’ve all come to learn because he’s that good of a coach. He’s a pretty darn good fighter as well.” He is married and moved his family of four because he wanted to devote his time to putting up the Reign training Center.

According to the official Mark Muñoz website, “He was born February 9, 1978 on a US Military Base in Yokouska, Japan to Filipino parents Imelda Kenery of Santa Ana,Manila,Philippines and Rodolfo Munoz from Pasay City, Philippines. At the age of 2, Mark and his family relocated to theUS and settled in the city of Vallejo, California.

Mark’s love of athletics began at a very young age, his main focus being football. However, when he was a sophomore in high school, he incurred an injury that prevented him from playing the sport that he loved so dearly. So he turned to wrestling and the rest is history…”

Kenny ‘KenFlo’ Florian got booed from his walk out and through out his post interview even after winning against upstart Diego Nunes. Kenflo bravely wore his Boston Bruins jersey before the fight which the crowd did not appreciate. Just the previous night in the same venue the Rogers arena, the Vancouver Canucks won game 5 of a hotly contested Stanley Cup series against the Boston Bruins.

The superior ground game and takedowns by Florian negated the punching power of  Nunes. Even when Nunes was on top Florian was able to land sharp elbows that cut his opponent. Although near the end of the third round Nunes was able to stagger KenFLo with a strong right hook, it wasn’t enough to overcome the lead. It was the first time Florian had fought at 145 lbs in the Featherweight division of the UFC. He originally fought at 185 lbs and is the first UFC fighter to compete in 4 divisions.

Kenflo has moved his training camp, “Montreal is awesome change for my career I have a tremendous amount of sparring partners all competing at very high level.” One of them happens to be Welterweight champGeorge St.Pierre“George is no help to make weight. He eats whatever he wants. He’s not afraid to order desert. I have to be disciplined while I’m hanging out with the guys here.” Kenny believes he’s the best match up for featherweight champ Jose Aldo.
